What counts towards the limit?
Sortby plan limits count the collections you have given sorting rules to, and the number of products inside each of those collections. Collections you never configured do not count towards your plan.
What if I go over?
If your store goes over its Sortby plan limits, there is a small buffer before anything stops, and you get a notice in the app first. Nothing is deleted: sorting pauses and picks up again as soon as you are back inside the limit.
